ESSAY: Food Is Essential
It’s about much more than just good eatin’
> tinyurl.com/3zldd2lf

We all eat. The preparation of our food–from mama’s cooking to professional, college-educated chefs–is a major issue. Whether we consume fast foods or haute cuisine, somebody prepares our food. In most cases outside our homes, we don’t personally know the people who feed us. Never think about them too seriously.

Ashleigh Shanti is a food front-liner. Gastronomically drawing on both her heritage and her imagination, in both creating and re-creating indigenous dishes and innovative menus, with and without recipe, Ms. Shanti demonstrates how to draw on old roots while simultaneously crafting new combinations of traditional fruits, veggies, legumes, and cuts of meat.

Moreover, Shanti is concerned not only by what is on the table but also by who has a seat at the table, or if, indeed, should there even be a table if we all don’t have a place and a plate. Check her out.
