Catfish Stew
This is my ridiculously easy one pot catfish stew, it’s my go to when I want a quick sauce for boiled yam, okra or rice. I shared the picture on instagram in December and I just realized I never shared the recipe. My bad :(. For those in Nigeria, fresh catfish is best. If you live outside Nigeria use defrosted Catfish, Basa or Snapper.

Quick, easy & tasty
Ingredients
- 2 large catfish – 500g (gutted and cleaned)
- 2 cups Nigerian Stew Base
- 2 Tablespoons Vegetable oil (divided)
- Cameroon or cracked black pepper – 1 teaspoon
- Salt – taste
- Maggi – 2 cubes
- Thyme – ½ teaspoon
- Freshly grated ginger – 1 teaspoon
Directions
- Cut fish into steaks and pat dry. Season with salt and pepper. set aside

- Place a large pot on medium heat. Add in stew base, left over ingredients and 3 cups water. Cover and bring to a rolling boil

- Reduce heat to below medium and add in the fish. Simmer for 25 minutes or until fish is cooked through
