Recipes include Jollof Rice with baked Chicken, Sweet Potatoes and Pan Seared Talapia fish and a delicious take on popular Ijebu dish ikokore.

Fish Cakes are a delightful way to start off a dinner party. It can be your appetizer to get your guest excited or it can be a quick fix to your hunger moments
Ingredients
- 2-3 Boneless tilapia fish
- 1 egg
- 1⁄2 a habanero pepper
- Spring Onions ( garnish)
- 1 garlic clove
- 1 lemon (using the zest)
- 1 tablespoon of ginger
- handful of cilantro
- 1⁄2 a cup of olive oil
- 1⁄2 a teaspoon of thyme
- 1⁄2 a teaspoon of dried red pepper
- 1⁄2 a teaspoon of curry
- 1⁄2 a Bouillon cube
- 1⁄2 a teaspoon of salt
- Store bought spinach salad
- 1 tomato
- 1 tablespoon of tomato paste
Instructions
- 1. In a hand blender drop in ginger, bouillon cube, curry, thyme, habanero, garlic, lemon zest and the juice from the lemon, a handful of cilantro add a table spoon of tomatoes paste, 3 table spoons of olive oil (blend lightly), move new blended paste into a bowl
- 2. Cut in small-diced pieces the fish, blend the fish in the same blender, then chop the spring onions, put in separate bowls
- 3. Pour fish blend in the same bowl with the paste. Add one egg (for bonding). Mix with your hands. (Have a bowl of water on the side to touch up your hands with allows for easy caking of fish cakes)
- 4. Make mini sized cakes and place on a plate. Cover with wrap and put in refrigerator and we’ll pan fry in about 10 minutes
- 5. Pour in a frying pan 3 tablespoons of olive oil at medium heat. Bring out cakes from refrigerator, place cakes in oil pan fry on each side for 5-7 minutes or until brown. Serve with your favorite salad dressing (I recommend honey mustard) with the spinach salad on the side; add dice tomatoes over your spinach, serve.
